Clove & Cinnamon Apple Cake
150 gms butter 1 cup brown sugar
2 cups stewed apple (or finely diced raw apple) 2 eggs
2 cups flour 2 tsp cinnamon
1 tsp ground cloves 2 tsp baking powder
½ cup raisins or sultanas ½ cup walnuts (optional)
Icing sugar to dust Whipped cream or yoghurt to serve
Preheat oven to 160ºC. Grease ring tin. Place butter in a large microwave proof dish and melt. Add all other ingredients and mix well. Pour into prepared tin and bake 35-40 minutes in fan bake oven, test with skewer - it is a cake that is supposed to be moist. Let cool in tin. Can be served warm as a dessert or enjoyed cold with a cuppa.
