Easy as Apple Pie

Melt 125g butter, Add 1 egg, half cup sugar, 1 and a half cups self raising flour, half teaspoon vanilla.  Mix and press into sprayed pie dish saving one third of mix for top.  fill with cold stewed or drained tinned fruit.  Sprinkle rest of mix on top.  Bake 160 deg 50-55 minutes. Serve with whipped cream and yoghurt mixed.
