Rice or Pasta Salad
2 cups cooked rice or pasta ½ cup sultanas
chopped red/green pepper (optional) ½ chopped onion
chopped celery 1 cup mixed vegetables
chopped dried apricots
Sauce
3 Tblsp oil 3 Tblsp vinegar
½ tsp mustard 1 tsp curry powder
1/3 cup sugar
Cook pasta - add mixed vegetables just before end of cooking time. Combine sauce ingredients and heat to dissolve sugar, cool slightly and pour over pasta. This salad keeps well.
